Fish soup – Kalakeitto
(about 7€ with salmon and 4,50€ with pollock)
Even though Finland is the land of thousands of lakes, it can be pretty expensive to buy fresh fish from the store. For this recipe, you can use ready diced, frozen fish, such as pollock or salmon (seiti/lohi).
2 onions (sipulit)
800 g potatoes (choose a firm variety – green bag) (perunat)
2 tbsp butter (voi)
8-10 l water
8 whole grains of allspice (maustepippuri)
2 bay leaves (laakerinlehti)
salt (suola)
2 dl cream (ruokakerma)
600 g fish (for example, frozen cod / salmon) (kala)
1 dl dill (tilli)
butter
1. Peel and dice the potatoes.
2. Dice and sauté the onions with butter in a large pot.
3. Add water, potatoes and spices to the pot and boil for about 10 min.
4. Bring the heat down, add the diced up fish and simmer for another 10 min.
5. Last, add the cream, dill and a dollop of butter.
